They are time tasted. They spring directly from regional cultures and cuisines. The change from a disposable society to a sustainable one begins with the first bite. If you care about these things and all their implications, you will want to savor The Pleasures of Slow Food." This book goes into the history of the Slow Food Movement as well as offering 40 recipes for some of the best food in the world. It honors the handcrafted traditions of passionate food producers and chefs. This is how food was meant to be. Real food using the best ingredients that have been grown or raised as it was done before all these insane methods of adding pesticides, hormones, antibiotics, etc. There are resources at the back of the book. Many of the recipes would accommodate vegetarian or vegan tastes naturally. The Pesto Alla Genovese and the Tortilla Soup with Pasilla Chilies, Fresh Cheese and Avocado are sublime. It doesn't get much better than this. If you can slow down and spend some time cooking, you will be rewarded with sumptuous food for the body and soul. This is one to cook from cover to back and with a little luck, that's what I hope to do.
