Review # 1 was written on 2019-01-01 00:00:00 Ken Caraglio This is an extremely thorough and well-researched journey into the world of medieval cooking, including its culture, environment, costs, ingredients, and social status. The sources the author uses are abundant and range from poetry and song to lists of accounts, illustrated books, and carved reliefs on architecture from the time. While it enforces the idea that seasonality and labor factored into the richness or poorness of the medieval person's table, Henisch also dispels the myth that peasants ate only flavorless gruel and that the ingenious cook could use what was at hand to produce tasty, warm, and nourishing food. |
