I didn't really read this. I got to the part where it required a custom flour mix and bailed. Also this book is from 2002 and I feel like we've made a lot of progress in gluten-free cooking since then. But for future reference: The flour mix is brown rice or chickpea flour, potato starch, and tapioca starch; OR brown rice and chickpea flour with potato and tapioca starch. Recipes also use xanthan gum, and occasionally egg replacer, though not as a substitute for eggs, because they call for those too. Measurements are by volume only. Covers muffins, quick breads, and coffee cakes; cookies, bars, cakes; icings, frostings, and sauces; pies, tarts and quiches; puddings, crisps, and cobblers; cream puffs, filo pastries, and crepes. No pictures save for about six color plates in the middle. A useful index with things sorted by type and also by ingredients.

My test for gluten-free books: I make two recipes from books I borrow from the library. If both turn out well, I buy the book. My first recipe turned out so well that I forced myself to make something else, since I didn't want to only buy a book for one delicious, amazing recipe. If you follow her directions, you will turn out delicious gluten-free foods. Of course, she requires the usual selection of GF flours, and I ended up having to buy guar gum so I could make graham crackers. I'm looking forward to making her savory pesto cheesecake for my next Mom's Night In with friends. My kids won't be left out at school or during play dates because of Rebecca's recipes.
