Review # 1 was written on 2014-07-07 00:00:00 Erik Klueber This rather athematic collection of substantial-soup recipes contains a few good ideas but is seriously flawed by a condescending simplism. For example, the directions for how to prepare a basic beef stock call for bones and stew beef to be tossed into a pot of water without first being roasted and browned. This is idiocy (and perhaps a crime against humanity)! There is what looks to be a promising Venetian recipe for baby peas and arborio rice with fresh mint. There is also a recipe for grilled salmon and soba which I will definitely try. This is not a book which needs to be in anybody's culinary library. Nothing tops James Peterson, Splendid Soups, New York: John Wiley & Sons, 2001. |
