I found the introduction of this book to be very inspiring. It really made me want to head to the farmers' market and eat more veggies! However, for some reason, the photos look dated and somewhat unappetizing. I'm not sure if it's the extreme close-ups or something else that gives me that impression. Still, the most important part of any cookbook is how well the food tastes. I made the Spaghetti Squash and Pork Stir-Fry. It had a good flavor but was so soupy that it looked like a stew in the pan. I doubled the recipe and maybe the extra squash contributed to that problem, but I am guessing a lot of the flavor got left behind in the liquid. Overall, I would probably give this book a 3.5 passed on current experience but rounding down to a 3 for the time being.
