So many great recipes for vegetables, Asparagus, Beets, broccoli, cabbage, carrots, eggplant, peppers, tomatoes, and zucchini. I've tried many of the recipes and will be trying more. Carrot Cake, chocolate zucchini cake, zucchini bread, pumpkin bread, Spinach Zucchini Frittata, and eggplant parmigiana,

I keep this book handy and refer to it often. Not only are some of the recipes delicious, but they have all the basic information on preparing almost any garden vegetable.
