Review # 1 was written on 2011-07-25 00:00:00 Michael Pouliot Asian fusion cooking has become quite popular in the United States. It normally combines a Vietnamese ingredient with a Japanese cooking technique or a Korean flavour with a classic Szechwan dish or some other similar odd pairing. Macanese cuisine, on the other hand, brings together Portuguese dishes with Chinese ingredients and Chinese dishes with Portuguese flavours. Since Macau was "returned" to the Mainland Chinese government, this cuisine may disappear. To counter that possibility, Annabel Jackson pressed Macanese cooks -- home and professional -- to share their traditional recipes with her, in order that they may be preserved. Her book offers not only the recipes but the stories of the cooks who provided them. Unfortunately, a number of the recipes assume too much about the culinary skills of the reader and offer too little direction. Her recommendations of substitutes for hard-to-find ingredients are particularly helpful. This appears to be the only Macanese cookbook in print. |
