Review # 1 was written on 2019-04-23 00:00:00 David Weil Published in 1965, this book gives a good "snapshot" of Irish foodways in the mid-20th Century - as well as memories from the author's childhood. In a way, this shows Ireland at a crossroads cooking-wise between modern and traditional. While this is not one of those mid-20th C cookbooks that advises the reader to use asbestos heat diffusers, there ARE a number of recipes that make use of evaporated milk and powdered borax (the latter to preserve eggs). At the same time, while generally cooking on gas stoves/ovens, the author does include some traditional open-fire (or 'under' in the case of "Poacher's Salmon") techniques. In addition to common ingredients, the book also has recipes for a range of game birds, shellfish, organ meats, and various smoked fishes. Includes samples of typical Irish menus and drink recipes. |
Review # 2 was written on 2016-04-11 00:00:00 Mike Holland I read cookbooks. This is one of those great cookbooks with stories and history woven throughout. Some of the recipes are a bit beyond my interest and a bit of offal, but there are some favorites as well. You will find all your expected Irish recipes like Irish soda bread and corned beef and cabbage but you will also find some lesser known Irish fare. Worth reading. |
