Review # 1 was written on 2011-10-09 00:00:00 Tim Sweeney One of the BEST books for cooks and foodies to answer questions about baking, cooking, food safety and more. The questions that have been answered in my kitchen from this: How long should you boil an egg to get it perfectly "hard boiled" and should I drop it in cold water after? Should I refrigerate butter or leave it out? What's the best way to keep mushrooms fresh?... and a lot more. If you need a present for someone who has too many cookbooks but loves to read about food, they probably need this book to round out their collection!

Review # 2 was written on 2008-06-29 00:00:00 William Kramer Y'all this book is amazing, I feel like I've learned more about cooking in the last couple days from this book than I learned in the first 23 years of my life so far. I wish I could learn more about the science of everyday things the way it was taught in this book; I've never seen such a supreme example of teaching about complex chemical and physical reactions in a way that's intuitive to someone who has next to no education about chemistry and physics. This is how science AND basic life skills should be taught, much more often. Amazing.
