I wrote chapters on each major type of animal that vets have concentrated on: horses (before cars); food-producing animals; factory farming; and pets. The changing ways that Americans value animals (from early transportation and food animals to today's "priceless pets") have dictated how veterinary medicine has changed over time, including which animals have benefited the most from research and clinical attention.
