In 1995, French-born and French-trained Chef Bernard Lussiana came to the hundred-year-old Malinowa in the Hotel Bristol in Warsaw. With a great respect for indigenous Polish ingredients, classic Polish dishes and the spirit of Poland, he developed a gourmet cuisine which received both international acclaim and international awards. Lussiana uses local and traditional ingredients (buffalo, bison grass), traditional Polish flavours and French techniques to produce high cuisine. I attempted his ham braised in raspberry vinegar and the result was stunning. The book is finished with translations of Polish poetry and photographs which correspond creatively to the food. This is an exciting addition to the library. |
Review # 2 was written on 2014-09-02 00:00:00 Ivan Micallef Polish cuisine is more than simple peasant fare. This collection of gourmet recipes range from appetizers through dessert. The chefs are not shy about using game. The recipes are easy to follow and have color photos of the finished products. |
