Inoltre contiene notizie interessanti e aneddoti su cuochi del passato, tra cui Antonine Careme, il re dei cuochi e io cuoco dei re. L'unica pecca è quella della superficialità, in parte perdonabile visto che l'excursus (dalla preistoria ai giorni nostri, nientemeno) è decisamente ampio.
