Questo saggio tenta un'operazione interessante: contestualizzare la cucina al periodo storico, come fin'ora s'è fatto con l'arte. Inoltre contiene notizie interessanti e aneddoti su cuochi del passato, tra cui Antonine Careme, il re dei cuochi e io cuoco dei re. L'unica pecca è quella della superficialità, in parte perdonabile visto che l'excursus (dalla preistoria ai giorni nostri, nientemeno) è decisamente ampio.

Excellent food reference book. The history of the culinary arts from the French point of view. This is a book that will be read over and over again as research and publications continue.
