Review # 1 was written on 2017-06-13 00:00:00 Paul Zahodnik Much like the Food Lover's Companion, this little book is full of information. Also like FLC, it's not exactly a "sit down and read through" book, but rather a reference. Lots of tips on how to select, store, prep, use all kinds of ingredients. Ranging from the common sense (wash the damn melons before cutting into them) to the obscure (a half dozen substitutes for arrowroot) to stuff cooks should probably have memorized by I have to look up Every. Single. Time. (OK, hotshot, you tell me the divisor by which to convert milliliters to teaspoons without Googling it.) Then there are some hidden gems, such as the formula for a molasses butter that is just freaking amazing on waffles. The e-book edition (handy to keep on my phone and tablet) contains a recipe index, but it's not linked to the text. The table of contents is really just the alphabet, but is linked to the text, so you have to just remember that the conversions of pan sizes by volume are under "pans" and not "measurements" although the entries for both will refer you to the other for more information. Very useful for cooks of all skill levels and well worth the very reasonable price. |

How long can I store this? Just saw a new edition has come out but I'm not sure an update is really needed.... |
