Chance from a variety of sources from the turn of the 20th century to the mid-1940s while a few were recently added by Andrew C. Schenkel. Attributed to their original creators or restaurants which made them their signature, each recipe offers a glimpse into the gastronomy of the casinos and nightclubs of pre-Castro Havana, the yacht clubs from the racy Jazz Age Caribbean to the more staid Philadelphia society of the period.
