Grill It! Good Housekeeping Favorite Recipes
This cookbook presents a method of grilling that is both simple and unique. Ms. Willinsky has chosen three basic recipes for jerk seasoning, one in the form of a rub, a dry seasoning, and a marinade. And then explains in detail (with marvelous photos I might add) how and which ones to apply to such and such dish. As well as some very specific tips on grilling style, temps, and times.
Now let me preface (midface?) this review by adding that I have tried dozens of jerk recipes before reading this book, most either online, or of my own invention, and I wouldn't consider any of them approaching what I would call an authentic Jamaican style flavor.
I made the marinade outlined in this book last night, followed the recipe to a 'T' and was able to whip up the best grilled jerk chicken I've had outside of Jamaican Comfort Zone in Wilmington, NC, and Cha Cha Chicken in Santa Monica, CA. (Keep in mind, I've never been to Jamaica but those places rock it out of the park). Look, I'm by far no expert grill chef but I do enjoy some jerk cooking and I have been disappointed enough by a lot of recipes to say that this book is a winner, and I recommend it to anyone as a definitive source for Jamaican jerk grilling.
