The Book of Diabetic Cooking
Another mainstream cookbook for a people with no other restrictions than low carbs. Interesting story of the author who developed carbohydrates intolerance and had to switch to low carb diet.
Recipes are not particularly fast - common, some use processed food, some tomatoes, dairy, yolk, but you can use them without salt as author does.
Like most of cookbooks, it's oriented on delighting your guests and family, not on the most efficient use of your time, efforts and money.
