Knife Skills in the Kitchen
This is a really good looking book with pictures on nearly every page.
If you already know how to use a knife, and want to know how to use it to cut anything from veggies to butchering animals, this is a good book for you.
I got it with the hope of really understanding how to use a knife. To cut veggies like you see them do with a big knife on the chef tv shows; rather than with a paring knife like I tend to do.
Unfortunately, it didn't help. It gave a couple quick comments about keeping the tip on the surface and rotating the knife...I think half a dozen pictures would have helped a lot along those lines.
I think this is a good book; but it didn't match my expectations or need/interest. That isn't the book's fault.
