A great collection of authentic recipes. Although they are often complex in terms of preparation, the author explains the ingredients, authentic tools and even rates various types of fresh and dried chiles for heat from "gringo friendly" to "gringo killer". My favorite recipes from this book include "camarones en mojo de ajo" (shrimp in garlic sauce) and a good carnitas recipe. For the ambitious cook, there are recipes for making authentic enchilada sauce and even tamales. There are salsa and dessert recipes and a few for margaritas and other drinks.
