125 Best Vegetarian Slow Cooker Recipes
Definitely one of my most-used cookbooks. I make the red lentil/carrot/coconut/whatever soup probably once a month or so. I find that the recipes could usually stand a little tweaking; often there is just no spice whatsoever. There's one potato curry that calls for a pound of potatoes and a teaspoon of curry. Ummm. What?
But overall the recipes are at the very least good launching points.
One problem I have is that many of the recipes call for canned or pre-slow-cooked beans. What the fuck is the point of using the slow cooker if the beans you're going to add are already cooked before you set it to "low" for 8 hours? Come on! When I make anything with beans in this book I start with dry beans, maybe soak them for an hour or two, and add enough water to the recipe to cook them along with everything else, and it's always worked perfectly.
The goulash recipe is odd but good. It relies too heavily on mushrooms, and shiitake mushrooms at that, which I think is supposed to give a semi-realistic impression of beef flavor. Not necessary. Needs tweaking. I do, however, recommend the lentil sloppy joes recipe as-is.
This book is a good solid start to a lifelong love affair with your slow cooker, just keep in mind that you can do things your own way and the author probably isn't going to track you down and kill you. I would give it three stars because of its basic mishandling of spices and beans, but it gets four simply because I rely on it so much. And damn, that red lentil/carrot/coconut/whatever soup.
